Gool Ol' Recipe Swap

Ok, y'all, here's the deal: my man pretty much does all of the cooking during the spring and summer months. I'm generally just in charge of sides and he whips up some magic meat on his grill and all is well with the world. It's a fantastic set up, quite frankly.

You see, I do the cooking in the winter months when it's acceptable to eat "hot" food according to Tonto. Once the temp reaches 65-70 degrees, though, it's not ok to eat "hot" food because it just makes you more, well, hot.

And that would be food logic according to Tonto.

Anyway, our little arrangement works wonderfully except when the winds are whipping 30-40 miles an hour. From what I hear, that makes grilling somewhat difficult. Who knew?

So I was hoping that today we could share some recipes that are good for spring and summer but don't require the participation of a grill and someone who knows how to use it without burning the house down.

Here's one I found recently and it's really good, y'all. I like to do Crockpot meals on Tuesdays because Tay has dance and this one has become a family favorite...

Crockpot Fajitas

1 packet fajita seasoning (your choice - I just do Wal-Mart's brand)
3-4 chicken breasts (or whatever part of the bird you prefer)
3/4-1 cup water
1 onion
1 bell pepper
garlic
cooking oil
tortillas

So you just take the chicken (I throw it in frozen) and place in the bottom of the Crockpot. Mix the fajita seasoning with the water and dump on top of the chicken. Then cook on low 5-6 hours or high 3-4 hours or until no longer cold in the center.

This is soooo easy, friends, and tastes so very good.

I slice the onion and bell pepper and then pan saute in the garlic with a dash of cooking oil before loading a tortilla up with meat, veggies, cheese and taco sauce. Preferably "fire" flavored for this Cajun girl.

Sometimes I serve with Spanish rice on the side and other times I whip up some fresh guacamole and have with baked Tostitos. Either way, it's yummy!
